Asparagus is in season! May is National Asparagus Month. The fact that there is a holiday for everything might seem a little silly. But, we think it’s actually a wonderful way to remind yourself to add more variety to your life! We all get stuck in ruts. We make the same meals over and over again, go for the same veggies or do the same activities. The fact that there is a holiday for every activity and food makes us break out of our routines to “celebrate.”

If asparagus isn’t a vegetable you usually reach for, it should be. Not only is it in season and therefore less expensive in the store and at the peak of its quality, but it’s also delicious and nutritious. It’s a versatile veggie that can go in every meal from breakfast to dinner, and we are huge fans! These four recipes are perfect for summer cooking as they aren’t as hearty and stick to your ribs as some winter recipes. In the summer, we often want things that don’t weigh us down quite so much. 

 

Cauli-rice Asparagus Salad with Tarragon Dressing

This delicious side is high in fiber and taste but low in calories and carbs! We love it because it’s easy and fast! It can be served hot or at room temperature, so it’s perfect for dinner or a picnic. However, we have found that this doesn’t well in the fridge; the textures suffer. Asparagus Ham Crustless Quiche

Quiche is great for brunch, lunch and dinner! While the crust on quiche can derail your blood sugar goals, this crustless version will leave you happy and satisfied! This recipe is best with leftover ham because cold-cut ham can have added sugar. With eggs and meat, this quiche is a good source of protein. The recipe calls for almond milk. But, you can easily make it with regular milk. The nutritional information will be a little different, but it’s up to you! Asparagus Stuffed Chicken Breast

Some stuffed chicken breasts can weigh you down. When a breast is stuffed with other meat, cream sauces or bread, they can be calorie-dense meals and carb-heavy. But, this version, made with asparagus, sun-dried tomatoes and mozzarella cheese, is lighter and excellent in the summer months! This is a meal for a cooler evening as you have to bake them for 15 to 20 minutes, but the oven isn’t on for too long! A serving has 277 calories, seven grams of carbs and two grams of fiber. Asparagus Soup with Lemon and Parmesan

Often smooth vegetable soups are heavy cream-based. That makes them rich and a bit much for the summer months. But this soup is pureed and made with broth making it lighter and perfect for warm weather. It can easily be made with vegetable broth if you are a vegetarian and will be just as delicious! It’s silky and creamy without any cream and sure to be a hit with soup lovers! A serving is 160 calories, 10 grams of carbs and two grams of fiber. Get the recipe.
