Four Meringue Pie Recipes Worth Celebrating
Pies topped with fluffy meringue are a delicious treat. There is something about meringue pies that screams “summer” to us. Others seem to agree as National Lemon Meringue Pie Day is August 15. While meringue is usually made from a mix of stiffly beaten egg whites and sugar, you can make low-carb versions and enjoy a pie topped with a cloud in your own home this summer!
We don’t think it’s fair to limit meringue to topping just lemon curd. It’s probably the most well-known of the pies, but there are so many to choose from. Here are four pies to bake and share soon!
Chocolate Pie with Meringue
If you prefer sweet to sharp, this pie is for you. The silky chocolate cream pairs beautifully with the meringue if you like sweet desserts. The chocolate filling does require a lot of whisking — nonstop. You need to babysit it as it cooks on the stove. That makes it less than ideal for some folks. But, for people with a hankering for chocolate, it is amazing! A slice has 253 calories, 4.6 grams of carbs and 1.3 grams of fiber. Get the recipe.
Lemon Meringue Pie
This is an excellent recipe if you would like to celebrate National Lemon Meringue Pie Day with the classic. The curd is sharp, sweet and gooey, while the topping is firm but airy. It’s an excellent lemon meringue pie, without all the carbs! The only thing is, we think the directions are a little off. The list of ingredients calls for a keto graham cracker crust. The site has an excellent recipe, and it’s linked on the page. But, you do have to think about that and make it ahead of time. So, add an hour to this recipe when you decide to make it! A slice has 175 calories, six grams of carbs and three grams of fiber. Get the recipe.
Raspberry Meringue Pie
If you’re looking for a fruity twist on the pie, this raspberry version is for you. The pie isn’t as sharp as a lemon meringue but is more tart than if you decide to make it with fruit like blueberries. Raspberries have a nice texture for a curd. We like that this pie has a more traditional sweet pie crust but is still low-carb. It’s not quite a shortbread, and it holds up nicely when you cut into it. This is also a pretty pie. The bright red of the curd next to the white of the meringue looks lovely. If you have company, it’s a great dish to serve! A serving has 248 calories, 9.5 grams of carbs and 3.4 grams of fiber. Get the recipe.
Key Lime Pie with Meringue Crust
If you want to celebrate the holiday but aren’t a huge fan of meringue topped pies, we think this is your best option! This pie uses baked meringue made with macadamia nuts as a crust. The crust is light and crispy and holds up well for this tasty key lime pie. The crust has to be cool before you fill it, so you should bake it a day ahead of time. Because of chilling times, this pie takes a while, but we think it’s worth it for such a delicious result! A slice has 371 calories, 10 grams of carbs and two grams of fiber. Get the recipe.
We hope one of these pies sounds scrumptious to you! Celebrate this national holiday and others with delicious dies!
